Poulet cocotte grandmère (Grandmother’s chicken) is one of my mainstay recipes for entertaining. I’ve made it with FODMAP amendments substituting the green part of spring onions for the red onion. This has been a hit at work lunches, Christmas in July, and staff Christmas dinners. It cooks equally well in a slow cooker.

For those with a nightshade allergy, like me, and depending on the season, I substitute white carrots (heirloom, may be hard to get), parsnips or daikon (Japanese white radish). Just keep taste testing until you are satisfied with the flavour profile in the pot.
